As a kid, I grew up on those Little Debbie snacks, though. I loved the Oatmeal Cream Pies, Cosmic Brownies, Christmas Tree Cakes, Swiss Rolls, Zebra Cakes, and all the other delicious desserts. Truly, though, I hadn’t thought about them for a while until a student had an Oatmeal Cream Pie in his lunch and it made me crave that again.
Since I can’t have dairy, I decided to try to make some vegan oatmeal cream pies at home. I modified a recipe I found for chewy oatmeal cookies and then came up with an idea for the cream filling. Since these are vegan, though, I couldn’t use cream cheese or heavy whipping cream like I normally would.
Tips for Making Homemade Oatmeal Cream Pies
- Use a piping tool or piping bag to apply the cream more evenly to the cookies
- If you want perfectly round cookies, cut them with a cookie cutter as soon as they come out of the oven
- Make sure the cookies are completely cooled before adding the cream or it will melt and make a mess. I waited about 1 hour before adding the cream to my cookies
- To make these gluten-free, you can substitute the all-purpose flour for almond flour, oat flour, or another gluten-free flour
- Smaller cookies work better when putting together each oatmeal sandwich cookie
- If you can’t find a dairy-free cream, you can replace that with coconut cream, almond milk, or any other non-dairy milk
- A flax egg can be used in place of the applesauce by mixing 1 tablespoon of ground flax seed with 3 tablespoons of water
- Make sure the vegan butter is at room temperature so it mixes well with the other ingredients

Vegan Oatmeal Cream Pie Step by Step
Ingredients
Cookies
- 1 1/4 cups all-purpose flour
- 2/3 cup quick oats
- 3/4 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 cup vegan butter (at room temperature)
- 3/4 cup dark brown sugar
- 1 1/4 tbsp molasses
- 1/4 tbsp sea salt
- 1/4 cup plain applesauce
- 2 tsp vanilla extract

Cream Filling
- 1/2 cup vegan butter (at room temperature)
- 1/4 tsp sea salt
- 2 cups powdered sugar
- 3 tbsp dairy-free heavy cream
- 1 tsp vanilla extract

Preparation
Cookies
Preheat the oven to 350F with a baking stone inside (or line a baking sheet with parchment paper).
In a large bowl, whisk the dry ingredients together: flour, oats, baking powder, and cinnamon.

Use a large bowl and hand mixer or in the bowl of a stand mixer with the paddle attachment to cream the butter and sugar until light and fluffy, about 3-5 minutes.

Add the molasses and salt until combined.
Mix in the applesauce and vanilla extract, beating on medium speed until well combined, another 3-5 minutes, scraping the sides of the bowl as needed.

Gradually add the flour mixture with the mixer on low speed until just combined.

Use a 1 tablespoon cookie scoop to scoop the dough into balls and place on the warm stone or lined baking sheets with about 1 inch between each dough ball.

Bake each batch of cookies for about 10 minutes, just until the edges are set.

Cool on the baking stone or cookie sheet for 5 minutes before moving to a wire rack to cool.
Continue with the remaining cookie dough.

Cream Filling
Using the paddle attachment on a stand mixer, combine the butter and salt until it is light and fluffy, about 3-5 minutes.

Slowly add the powdered sugar until it’s mixed in (it will look very dry at this stage).

Add the cream, 1 tablespoon at a time, until the cream is soft.

Once the cookies are completely cooled, add a small amount of cream to the flat side of half of the cookies, keeping it about 1/4 inch away from the edges.

Gently press another cookie on top of the cream until it sticks and the cream spreads to the edges of each cookie sandwich.

Continue with all cookies until you’ve made all of your vegan oatmeal cream pies.

Leftovers
Storage: Place any extra oatmeal sandwich cookies in an airtight container. If you live in a humid area, like I do, the best way to keep the cookies good is in the refrigerator. They will last for 2-3 days.

ONE thing I love about vegan desserts is that they are often just as delicious as the non-vegan versions. That’s not the case with plant-based chicken, beef, etc.
