Although this recipe is written with oat milk, you can use any non-dairy milk for dairy-free ice cream recipes, such as coconut milk, almond milk, cashew milk, or soy milk. Oat milk will be the most creamy, but you can also add a little bit of coconut cream to help thicken the ice cream.

Vegan Oat Milk Ice Cream Step by Step

Ingredients

  • 4 cups water
  • 14 oz cashews, raw and unsalted
  • 2 cups oat milk
  • ½ cup maple syrup
  • 2 tsp vanilla extract

Preparation

Place a loaf pan in the freezer for at least 6 hours before making the ice cream

Bring the water to a boil in a medium saucepan

Remove the pot from the heat, add the cashews, and cover the pan

Soak the cashews for 45 minutes then drain the excess water

Place the cashews with half of the oat milk in a high-speed blender and blend for one minute until combined

Add the remaining milk, maple syrup, and vanilla extract and blend for another minute until frothy and smooth

Pour the mixture into the prepared loaf pan and place in the freezer

Gently mix every 20 minutes for the first hour

Freeze another 6-8 hours, up to overnight

Once frozen, let the ice cream sit out for 10 minutes before serving to soften slightly

Storage: Keep any extra ice cream in the freezer in a freezer-safe container or covered tightly with plastic wrap and aluminum foil, for up to one month.
