Making a stir fry at home is a great way to use up things you may have in the kitchen. You can put whatever you have on hand into it and make dinner. This time, we decided to use some whole-grain rice that we had in the pantry as well as some rotisserie chicken.

I wanted to give it a bit of an Asian flair, so cooked it in sesame oil and added some water chestnuts. Justin isn’t a fan of the water chestnuts but I like the crunch that they add to the meal. You can trade out any of the vegetables for whatever you have on hand.

Chicken and Whole Grain Stir-Fry Step by Step

Ingredients

  • 1 bag (8.5oz) whole-grain rice, uncooked
  • 1 tbsp sesame oil
  • 2 eggs, lightly beaten
  • 1 tbsp garlic, minced
  • 1/2 cup red onion, thinly sliced
  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups chopped broccoli and cauliflower
  • 8 oz water chestnuts, drained

Preparation

Prepare rice according to the package.

In a large wok or skillet, heat 1/2 tbsp sesame oil over medium heat.

Quickly soft scramble the eggs.

Remove and set aside.

Add remaining oil to skillet and heat.

Add garlic and onions and stir-fry for 2 minutes.

Add chicken and vegetables and stir-fry for 2 minutes or until heated through.

Fold in rice and eggs.

Garnish with soy sauce if desired.

Chicken and Whole Grain Stir-Fry Leftovers

Store leftovers in an airtight container in the refrigerator. Reheat on the stovetop until warmed through. If it’s dry, add a bit of sesame oil or soy sauce to the meal.

  5. Sounds like a lovely healthy easy to make meal. We’re trying to eat low carb so aren’t eating rice, pasta, potatoes, or bread at the moment, but this has really made me want some rice x
