We have been experimenting with making all types of sushi rolls at home lately. One of my favorites is the shaggy dog roll when we go to our favorite sushi restaurant. There are a few variations in the shaggy dog sushi recipes that I’ve found, but that’s the beauty of making it at home… you can customize the sushi roll to your preferred tastes. Sometimes the best sushi is the one you make at home and make your own. 

For example, I keep mine to only a few simple ingredients, but you can make your own your way. Many restaurants will include spicy mayo sauce on the top, but I don’t like spicy, so I omit that in my recipe. You’ll also find cream cheese in a lot of sushi rolls. 

Another thing I like about this recipe is the lack of raw fish. I know a lot of people like it for sushi, but I am not a fan of raw fish. This is a fully cooked roll since you cook the shrimp in tempura batter before starting the roll. 

You can serve your sushi roll with soy sauce, eel sauce, spicy sauce, unagi sauce, spicy mayonnaise, teriyaki sauce, or lemon juice. All are great options depending on if you want to keep the sushi recipe mild or spicy, bold or sweet, etc. You can also top it with sesame seeds or green onion. 

Tip: You’ll need a few things close by when working with seaweed and sushi rice. Have a small bowl with cold water to dip your fingers in before touching the rice. Then keep a small hand towel close to dry your hands when touching the seaweed or other main ingredients.

Shaggy Dog Sushi Roll Step by Step

Ingredients

  • 1 piece seaweed (or nori sheet)
  • 1/2 cup sushi rice (prepared)
  • 4 pieces shrimp tempura
  • 1 tbsp mayonnaise
  • 2 pieces imitation crab sticks

Preparation

Lay a sheet of nori or seaweed on a sushi mat or bamboo mat with the rough side up.

Spread the prepared sushi rice on top of the nori sheet, making sure it goes to the edge of the nori sheet.

Lay the tempura shrimp in a single layer in a straight line at one edge of the nori wraps.

Add the mayonnaise on top of the tempura shrimp.

Carefully use the bamboo mat to roll the sushi.

Shred the imitation crab into thin slices and lay them perpendicular to the outside of the roll. 

Use a very sharp knife to cut into slices about 1/2 inch thick.

Storage: Store leftover sushi in an airtight container in the refrigerator for up to 1 day.
