Jump to RecipeThis summer has been all about pineapple for me. I love pineapple, it’s my favorite fruit, and I’ve been finding a lot of ways to work it into meals. My newest creation was a pineapple shrimp stir fry and it was delicious!
Many recipes will call for pineapple in the ingredients. Fresh pineapple has the most flavor, so always choose that if you can. During the season, which is summer here, we can sometimes get a pineapple for just over $1. We have two pineapples in the kitchen ready to cut and core right now.
I never worry about pineapple going bad because we all really enjoy it. If it isn’t used in a recipe, then we will eat it fresh. Pineapple is a great summer fruit because it’s full of water. Eating pineapple will help keep you hydrated, which is important in the heat of summer.
For this recipe, we combined the pineapple with shrimp, red peppers, and rice. I used my rice steamer to prepare the rice, and the rest was all prepared in one pan. I love one-pan meals since they make cleanup so easy.
When I cooked this, I left the tails on the shrimp. Justin requested that for the photos. Normally, though, I like to remove the tails before cooking to make it easier to eat. Either ways works, it’s up to you and what you prefer for your pineapple shrimp stir fry.

Pineapple Shrimp Stir Fry Step by Step
Ingredients
- 2 cups brown rice
- 2 tbsp butter
- 1 lb shrimp (precooked)
- 1 red bell pepper (chopped)
- 1 pineapple (chopped)
- 1/3 cup bbq sauce
- 1/4 cup zesty Italian dressing
- 1 green onion (sliced)
Preparation
Prepare the rice according to the package directions. I like to use my rice steamer to make it easy.
Meanwhile, in a large skillet, melt the butter over high heat. Then add the shrimp in a single layer. Cook the shrimp for about 5 minutes, flipping at least once. Remove the shrimp from the pan.

Reduce the heat to medium and add the chopped red bell pepper. Cook for about 2 minutes, stirring until they start to soften.

Place the pineapple in the pan. Cook for another 2 minutes, stirring so both sides get cooked.

Pour the BBQ sauce and Zesty Italian Dressing over the peppers and pineapple. Stir to coat and cook until the sauces start to bubble.

Add the shrimp back into the pan and stir to combine.

Serve the pineapple shrimp stir fry over a bed of rice and garnish with sliced green onions.

Pineapple Shrimp Stir Fry Leftovers
Storage: Any leftovers can be stored in an airtight container in the refrigerator for 2-3 days. I suggest storing the shrimp separately from the rice as the rice will absorb all of the sauce.
Reheating: Reheat the rice and stir fry separately. To reheat the shrimp stir fry, I recommend putting it in a medium saucepan over medium-low heat until warmed through, about 5-10 minutes. Stir often so it doesn’t stick to the pan. If the sauce is too thick, add a small amount of Italian dressing or water as needed.

Photos of shrimp do look better with the tails on but for eating it is so much better with them off! I love all things pineapple!

For a long time I didn’t like having fruit in a recipe. It seemed strange because fruit should be a side or breakfast. But now that I’ve done it often, I really like it!
I don’t eat meat so I stock up on fish through out the week. I love sweet in my dishes, this pineapple shrimp would be perfect for a weeknight meal for me.
