Homemade Pizza with a Bread Machine

Pizza has always been a family favorite, it’s easy to make homemade pizza with a bread machine and is versatile to fit everyone’s tastes.

A few years ago, at my wedding shower, I was gifted with a bread machine. I didn’t realize just how much I would end up using it! I love making fresh bread to go with a lot of our meals. But more than that, I use this bread machine pizza dough recipe that came with the machine. The original recipe did not include the extra seasonings, but we like the added flavor that it adds to the crust.

Pizza is one of my weaknesses when it comes to food. This recipe makes it easy for me to customize dinner to just how we want it. For example, I like ricotta cheese on mine, but most pizza delivery places don’t use ricotta. I’m sure you could also make this recipe by hand, but I have never really done that so can’t tell you what to do differently. It’s so easy to use the bread machine, though, to make the perfect pizza dough. Add the ingredients, set to dough, and press the start button. 

Sometimes we will make frozen pizzas, but making delicious homemade pizza is so much better! The boys get so excited when it’s pizza night. They love helping me roll out the dough and pick out their toppings. Well, I should say they like to help prepare Justin’s because he uses all the toppings. The boys and I only like cheese on our pizza. 

Why Use the Bread Machine for Homemade Pizza Dough

Using your bread machine to make the pizza dough takes most of the guesswork out of the process, which is a huge win for busy weeknight cooking or family pizza nights. The machine handles the kneading and first rise automatically, so you don’t have to worry about sticky dough, tiring kneading, or inconsistent results. You simply add the ingredients, select the dough cycle, and go about your prep work or toppings while the machine takes over. The result is a consistently elastic, smooth dough that’s ready to stretch and bake, making your homemade pizza experience far easier and more satisfying.

Choosing Your Flour & Getting the Right Crust Texture

The type of flour you use makes a big difference in how your crust turns out. All-purpose flour works fine for a soft, tender crust, but if you prefer a chewier, more “pizzeria-style” crust, try using bread flour (which has higher protein content). You can also swap in up to half whole wheat flour for a heartier, slightly nutty flavor (just know the texture may be a bit denser). If you go with bread flour, you may need to add an extra tablespoon or two of water so the dough remains pliable. Watch for the dough during the cycle — if it’s bouncing around loosely or sticking excessively to the sides, you can adjust as needed (see “Troubleshooting” below).

Troubleshooting Common Dough & Baking Issues

Even with a bread machine doing the bulk of the work, things can occasionally go off track. If your dough seems under-risen at the end of the cycle, let it sit in the machine (with lid closed) for another 10-15 minutes — sometimes the yeast just needs a little more time. For dough that feels very dry or cracks when you roll it, lift the lid a minute into the kneading cycle and add 1 teaspoon of warm water at a time until the dough forms a smooth ball. If it’s too sticky and sticks to your fingers when trying to shape it, dust in 1 teaspoon of flour at a time until it’s manageable. Lastly, if your crust ends up doughy under the toppings, the oven may not have been hot enough or the pizza may have had too many wet toppings; aim to bake on a pre-heated stone or tray at 450°F (230°C) for a crisp finish.

Baking Tips for a Thin or Thick Crust Finish

Depending on your crust preference, your baking approach will vary. For a thin, crispy crust, divide the dough in half, roll each out thinly (about ¼-inch), and bake on a pre-heated pizza stone or heavy baking sheet at 450°F for about 10-12 minutes or until the edges are golden and cheese is bubbling. For a thicker, softer crust, use the full dough ball, roll slightly less thin, and bake at 400°F for about 15-20 minutes. Brushing the crust edge with a bit of olive oil prior to baking will enhance browning and crunch. A pizza stone helps draw moisture away for a better bottom crust; if you don’t have one, a perforated pizza pan or pre-heated baking sheet works well too.

Make-Ahead Options & Storage for Dough and Pizza

One of the best things about making your own dough is how flexible it is for advance prep and leftovers. You can prepare the dough in your bread machine, then after the cycle is complete, shape it into a ball, brush lightly with olive oil, and store it in the refrigerator in a sealed container for up to 24 hours — this slows the rise and develops extra flavour. You can also freeze dough balls: wrap tightly in plastic wrap and freeze for up to one month; thaw in the fridge overnight, let come to room temperature, then roll and bake as usual. For leftover baked pizza, store in an airtight container in the fridge for up to 2–3 days. To reheat, warm in a 350°F oven for about 5–7 minutes (or crisp up in a skillet) rather than microwaving, which tends to make the crust soggy.

Nutrition & Dietary Variations for Your Homemade Pizza

When you make your own dough and pizza at home you have full control over ingredients and nutrition. The dough outlined here (4 cups flour, olive oil, yeast, water, seasonings) yields approximately 8 servings with about 280-300 calories per slice (crust only) depending on size and toppings. For dietary tweaks: substitute vegan cheese or use nutritional yeast for a dairy-free version; swap in a gluten-free flour blend compatible with your machine (check manufacturer guidelines); and lighten things further by using half-whole-wheat flour and skipping butter or excess oil. Top with vegetables, lean protein, and use a light tomato sauce to keep your homemade pizza both delicious and family-friendly.

Personally, I just want cheese on my pizza, and so do the boys. I am not supposed to eat dairy, so I use vegan cheese. You can add any toppings you’d like, but these are some of our suggestions:

Homemade Pizza with a Bread Machine Step by Step

Ingredients

  • 3/4 tsp salt
  • 4 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 3/8 cup water
  • 3 tbsp olive oil
  • 1 tbsp garlic powder
  • 2 tbsp Italian seasoning
  • Favorite pizza toppings: tomato sauce, cheese, meats, veggies, etc.

Preparation

Set up the bread machine as directed and add all of the ingredients except your pizza toppings to the baking pan. For most bread machine recipes you want to keep the dry ingredients and wet ingredients in different layers to make sure the instant yeast doesn’t touch the liquid ingredients. But for this simple recipe, it all goes in the bread machine pan together.  Select the dough setting on your bread machine and let it run through the complete dough cycle. Machines will vary. Mine takes one and a half hours to make the dough. 

When the bread machine is done, preheat the oven to 400F. Remove the dough ball from the pan and place it onto a lightly floured surface. 

Knead the dough a few times by hand. Gently roll out the dough into a large circle or square. For a thicker crust, use all of the homemade dough now. If you want a thin crust, use half of the dough and roll it out very thin. Then repeat with the other half of the dough.  Place dough on a baking stone, cookie sheet, or pizza pan. 

Use a pizza cutter to cut the dough into smaller pieces. We like to make at least one pizza for each person. Smaller pieces are also easier to work with and move for baking. 

Spread the pizza sauce and desired toppings out on each piece of pizza. This is where you can customize each piece. As you can see, we all want ours a little bit different from the others. 

Bake for about 15 minutes in a preheated oven, or until the cheese is melted and the crust is cooked.

Homemade Pizza Leftovers

Storage: Store leftover pizza on a plate covered with plastic wrap or in an airtight container in the refrigerator for up to 2-3 days. 

Reheating: The best way to reheat your pizza is to place it back in the oven for a few minutes until warmed through.

    1. Thank you! We have tried it with all-purpose flour and whole wheat flour. I don’t really taste a difference, so we usually stick with the whole wheat flour. I haven’t tried any gluten-free because no one in my household has a gluten allergy so haven’t needed to try it. If you try it, let me know how it works, my grandmother has celiacs and would love to know she could make some pizza!
