Super Easy Pizza Flatbread

Pizza flatbread is a perfect easy lunch or dinner, especially when you have kids in the kitchen. You only need a few ingredients and 20 minutes.

Between the kids being home unexpectedly for the last quarter of the school year, plus summer break, we’ve needed some quick and easy lunches. Both of my boys love pizza. Just like their momma!

Normally, I make a pizza crust with the bread machine, but that takes a while. It’s delicious, but it isn’t a quick meal. I’ve also made pizza on a bagel before, but Ryan doesn’t care for that as much.

So, we decided to try making pizza on some store bought wheat flatbread. Since it’s flatbread, it means we aren’t loading up on carbs.

Making pizza flatbread is so easy, the boys help with it, too. They like their pizza fairly plain, just like me. We like for it to have just sauce and cheese. I like a bit more cheese than the boys, but we usually split the cheese pizza together.

Step by Step

Spread the pizza sauce on the flatbread. You want it to almost reach the edges.

Cover the sauce with shredded cheese. We use mozzarella and a bit of parmesan cheese.

Top the shredded cheese with a few pieces of fresh mozzarella. This is optional, but the fresh cheese is delicious!

Add any other desired pizza toppings. We will grab a few basil leaves from our garden if we have some. And, the boys will eat the basil! Justin likes a lot more on his pizza, so he likes to add pepperoni, olives, peppers, and whatever else we have in the refrigerator.

Broil on low for about 7-10 minutes, until the cheese has melted. Garnish with oregano, slice, and serve!

Leftovers

Put any leftover pizza in a container and refrigerate it. When you are ready to reheat, I suggest using the oven or toaster oven to keep the crust crispy. The microwave will warm it, but the crust tends to get soft.
