Why You’ll Love This Recipe
This homemade hamburger helper is everything the boxed version promises—creamy, cheesy, comforting—but made entirely from scratch with simple pantry ingredients. It’s a true one-pot dinner that’s perfect for busy weeknights, picky eaters, and anyone who wants an easy, budget-friendly family meal without processed shortcuts.
If you grew up on classic American comfort food, especially Midwestern-style skillet dinners, this recipe will feel familiar in the best way.
A Brief History of Hamburger Helper
Hamburger Helper has been a staple of American kitchens for decades, known for its convenience and affordability. The boxed version was first introduced in 1971 by General Mills as a quick, easy solution for busy families to turn ground beef into a complete meal. Its launch came during a time when more households were relying on packaged foods and convenience meals, and it quickly became popular for weeknight dinners, especially in the Midwest.
The concept was simple: combine ground beef with pasta or rice and a flavored sauce mix to create a hearty, filling meal in about 30 minutes. Over the years, Hamburger Helper expanded into a variety of flavors—cheeseburger macaroni, stroganoff, and taco, to name a few—cementing its place in American comfort food culture.
While the boxed version is convenient, many home cooks have started creating their own “from scratch” versions to avoid preservatives and customize flavors. Our homemade hamburger helper recipe takes inspiration from the original, keeping the creamy, cheesy comfort we all remember, but with fresh ingredients and the freedom to adjust seasonings to your family’s taste.
Variations and Substitutions
- Swap ground beef for ground turkey or ground chicken.
- Use smoked paprika for a deeper flavor.
- Add peas or diced bell peppers for extra vegetables.
- Use rotini or egg noodles if that’s what you have on hand.
- For an extra kick, add some chili powder or red pepper flakes to the dish or top with hot sauce.
Serving Suggestions
Serve this homemade hamburger helper hot and bubbly straight from the skillet. It pairs well with a simple green salad, steamed broccoli, or garlic bread for a complete weeknight dinner. This is a kid-friendly meal that works just as well for casual family dinners as it does for meal prep.

Homemade Hamburger Helper Step by Step
Ingredients
- 1 tablespoon olive oil or butter
- 1 pound lean ground beef
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 ½ cups milk (whole milk preferred)
- 2 cups uncooked elbow macaroni or small shell pasta
- 1 tablespoon tomato paste
- 1 teaspoon paprika (or smoked paprika)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon mustard powder
- ¾ teaspoon kosher salt (adjust to taste)
- ½ teaspoon black pepper
- 1 cup shredded sharp cheddar cheese
- ½ cup shredded Colby Jack or Monterey Jack cheese
Optional flavor boosters
- 1 teaspoon Worcestershire sauce
- Pinch of red pepper flakes
- 2 tablespoons cream cheese for extra creaminess

Preparation
Heat a large deep skillet over medium heat. Add the olive oil, then brown the ground beef, breaking it up with a wooden spoon. Cook until no longer pink. Drain excess grease if needed.

Add the diced onion and sauté for 3–4 minutes until soft and translucent. Stir in the garlic and cook for 30 seconds until fragrant.

Sprinkle the flour over the beef mixture and stir well to coat. Cook for 1 minute to remove the raw flour taste.

Slowly pour in the beef broth while stirring to deglaze the pan. Add the milk, tomato paste, and all seasonings. Stir until smooth.

Add the uncooked pasta directly to the skillet. Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

Remove the skillet from the heat. Stir in the shredded cheeses until melted and creamy. If using cream cheese, add it now and stir until fully incorporated.

Let the dish rest for 2–3 minutes before serving. The sauce will continue to thicken as it sits.

I make several similar recipes from scratch. I don’t like boxed Hamburger Helper. It’s salty, tastes like chemicals, and isn’t even cheap like it used to be.
This recipe feels like a warm hug in a bowl—simple, hearty, and exactly what busy weeknights call for, especially with that one-pot ease and rich cheesy finish. I love how making it from scratch transforms a nostalgic classic into something fresher and more wholesome without losing that comforting flavor we all remember. It’s the kind of meal that brings everyone to the table quickly and happily, and honestly, who can resist tender pasta wrapped in a savory, beefy sauce like that?
This is so good! Calling this Hamburger Helper is like calling a Ferrari a car.
Would you believe I’ve never used Hamburger Helper for meals. Having said that, this homemade version looks delish. Please remind me not to read food/cooking blogs when I’m hungry. My eyes are feasting on these pictures. Perfect comfort food. I love that this only takes 35 minutes. Like many, I don’t have enough hours in the day. Quick meals like these are always good to have on hand. Thank you for the food inspo.

It’s so much better to make it at home. My teen likes it in the box but I’m sure there are things in there that are just not good so I don’t buy it, This would be better,
This looks so delicious. I can’t wait to cook this, thanks to your recipe!
Much better than the box. This hamburger helper may take a little longer, but it’s totally worthy. It tastes so delicious!
Yum! I haven’t made this in a while, and my kids absolutely love homemade hamburger helper. The blend of seasonings gives it such a rich, delicious flavor, especially with all that cheesy goodness mixed in.
This recipe sounds like it would make for a wonderful comfort dish. It could easily become a favourite with my kids and husband. It sounds like it would be packed with flavour and have a gorgeous gooey cheesiness to it.
I can’t wait to try this. My husband talks about hamburger helper all the time. It was his favorite growing up. I’ll have to give this recipe a shot.
Thank you for this recipe, which seems filling. I want to make this during the upcoming summer vacation season, but could you please suggest a vegetarian version?
I have never made a vegetarian version, so I am not sure how it would come out. You could try any meat substitute for the ground beef that is closest when broken up like this, and use vegetable broth instead of beed broth.
