Instructions
Heat a large deep skillet over medium heat
Add the olive oil, then brown the ground beef, breaking it up with a wooden spoon
Cook until no longer pink and drain excess grease if needed
Add the diced onion and sauté for 3–4 minutes until soft and translucent
Stir in the garlic and cook for 30 seconds until fragrant
Sprinkle the flour over the beef mixture and stir well to coat
Cook for 1 minute to remove the raw flour taste
Slowly pour in the beef broth while stirring to deglaze the pan
Add the milk, tomato paste, and all seasonings and stir until smooth
Add the uncooked pasta directly to the skillet
Bring to a gentle simmer, then reduce heat to medium-low
Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened
Remove the skillet from the heat
Stir in the shredded cheeses until melted and creamy (if using cream cheese, add it now and stir until fully incorporated)
Let the dish rest for 2–3 minutes before serving as the sauce will continue to thicken as it sits
