Balsamic Vinaigrette Feta Topped Chicken with Tomatoes

Feta Topped Chicken is a great easy one-pan meal made with chicken breasts marinated in balsamic vinaigrette and topped with tomato and feta cheese.

Like so many of my recipes, Feta-Topped Chicken is another that I don’t remember where it came from. I know my aunt used to make it when I lived with her. And when Justin started eating dinner there with us, he told me I need to make sure to get this recipe from her.

I don’t care for feta cheese or tomatoes, so I eat the marinated chicken on its own. Or I put it in a salad when we have this meal. The chicken is cooked in balsamic vinaigrette dressing. It adds a lot of flavor to the meat. When I put it in a salad, I use the same dressing for the salad. But, the chicken has so much flavor, it’s good just on its own.

Feta-Topped chicken is a really easy meal to make. And it doesn’t make much of a mess since it’s cooked in one pan. At most, this recipe only takes about 30 minutes to prepare.

We’ve made a few recipes using the balsamic vinaigrette to marinate chicken. After knowing how this tasted, I used it for a base to make Easy Chicken Corden Bleu. Just make sure you get the dressing, not the actual vinegar. We made that mistake the first time, and it wasn’t great. The vinegar was too strong. And it costs a lot more. If you use that, I would use just a very small amount to flavor the chicken.

Serving Suggestions & Tips

  • Add some olive oil to the pan to help prevent the balsamic vinaigrette and chicken from sticking. 
  • Garnish with a squeeze of fresh lemon juice, cherry tomatoes or grape tomatoes, fresh herbs such as fresh basil, or pine nuts. 
  • If you want feta stuffed chicken, use boneless, skinless chicken breast halves and a sharp knife to slice partially into the center of each chicken breast. Then, when they are almost done cooking, fill them with tomatoes and creamy feta cheese. 
  • Serve the chicken with a side Greek salad, over a bed of pasta, with fresh bread, or with roasted spaghetti squash. 
  • A good wine pairing for this meal is white wine such as sauvignon blanc.

Feta-Topped Chicken Step by Step

Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1/2 cup balsamic vinaigrette dressing
  • 1 tbsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tomato (sliced)
  • 1/4 cup feta cheese

Preparation

Pour the balsamic vinaigrette dressing into a large skillet and set it over medium heat. Place the chicken in the pan and sprinkle it with the Italian seasoning and pepper. Cook for about 20 minutes, turning occasionally until the chicken has cooked through and reaches an internal temperature of at least 165F on a meat thermometer.

Top each piece of cooked chicken with two slices of tomatoes and 1/2 of the feta cheese.

Cover the pan and set the heat to low. Cook for about 5 more minutes, until the cheese starts to melt.

Feta Topped Chicken Leftovers

Storage: Let the leftovers cool to room temperature then store leftovers in an airtight container and refrigerate for 1-2 days. 

Reheating: The best way to reheat the chicken is in the oven or a toaster oven until warm, about 5-10 minutes.

  1. Feta makes everything better! Seriously though there are several great ingredients here that will help to keep the chicken moist. It seems easy and as if it would taste delicious.

    1. I am not a huge fan of feta cheese, but my husband loves it! This chicken does stay really moist as it cooks, and I will sometimes top it with mozzarella since that’s a cheese I like!

    1. It’s very possible. I don’t know about the rest of it, but either way, wherever it comes from, it’s one that we make often at our house since it’s so quick and easy.

    Holy mouth water! I love all the ingredients. My hubby however does not like tomatoes, but he’d love the rest of this. Mmmmm. Definitely going to have to make this for my family. I am putting together a book of recipes that I want to try because I feel like we always eat the same old stuff. I am going to add this in there.

    1. You could easily make it without the tomatoes. I tend to make a few different versions in our house to please everyone. I prefer mozzarella cheese, and my boys won’t eat tomatoes. I cook the chicken together then customize for each of us. But, according to my husband, having both the tomato and feta cheese is the only way to eat this one!

    Feta might seriously be my favorite cheese right now. Although, sharp white cheddar always seems to sneak its way up there too! I definitely need to make this delicious recipe!
