If you’re following a Mediterranean diet, this fits in there as long as you haven’t previously had too much red meat in the week. As such, it’s a very fresh summertime meal. To me, everything Mediterranean just yells “summer” since it’s usually such light ingredients.
The best way to serve the rosemary steaks is with just a bit of the relish. You don’t want too much or it will start to overpower the taste of the steak. I used jarred roasted red peppers to make things simple. But you could always roast your own red peppers if you prefer.

Rosemary Steaks with Red Pepper Feta Relish Step by Step
Ingredients
- 2 tbsp minced garlic, jarred
- 1 tsp fresh rosemary leaves, finely chopped
- 4 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 1 lb grilling steak
- 2 tbsp vinegar
- 12 oz roasted red peppers, drained and coarsely chopped
- 1/2 cup crumbled feta cheese

Preparation
In a ziptop bag, combine the garlic, 1/2 tsp of rosemary, 2 tbsp olive oil, salt, and pepper.
Add the steak, seal, and knead to coat.
Let the steak stand for at least 10 minutes to marinate, up to 4 hours in the refrigerator.

Preheat a grill to 350F.
Grill the steak, about 8-10 minutes per side, until desired doneness.
Meanwhile, combine the vinegar and 2 tbsp of oil in a medium bowl.

Stir in red peppers, 1/2 tsp rosemary, and feta cheese.
Serve the steak warm topped with the red pepper relish.

Rosemary Steaks with Red Pepper Feta Relish Leftovers
Keep the steak separate from the red pepper feta relish when you store leftovers. The relish will make the steak soggy and it will soak up too much of the juice, drastically changing the flavor of the steak.
