Creamy Dairy-Free Chicken Marsala Pasta Recipe

Make a dairy-free version of our favorite chicken marsala pasta for a great easy meal. Pair it with roasted asparagus for a full dinner.

Many years ago, I found the website 100 Days of Real Food, and we have tried many recipes from there! One that we kept going back to was the classic Chicken Marsala. It has a lot of flavor and is simple to make.

Last year, I found out that I am allergic to dairy, so we had to rethink some of our favorite meals. The original recipe used heavy cream, and I garnished it with Parmesan cheese, but I needed to cut that out. I substituted a mixture of almond milk and vegan butter for the heavy cream.

We enjoy the pasta with a side of roasted asparagus, as noted in the recipe below. But, if you prefer other vegetables, anything else can be made to go along with it. This makes a great weeknight dinner that tastes just as good the next day for leftovers at work. 

The base of the sauce, marsala wine, is a fortified wine made in Sicily. You can purchase it as cooking wine or get a bottle of dry marsala wine. 

Serving Suggestions

  • Serve with a glass of white wine or red wine such as Pinot Noir to complement the marsala wine.
  • Mix some garlic powder, onion powder, or Italian seasoning in your creamy marsala wine sauce.
  • Make it a complete meal with a side of fresh bread, cornbread, or white rice.
  • Substitute other vegetables for the asparagus, such as green beans, broccoli, roasted peppers, carrots, or zucchini.
  • For a more robust flavor, replace the almond milk with chicken broth. 
  • Make gluten-free chicken marsala by replacing the all-purpose flour with tapioca flour or rice flour. Omit the spaghetti noodles or use a gluten-free pasta. 
  • Garnish with chopped fresh parsley, fresh thyme, or fresh garlic. 
  • Marsala cooking wine can often be found with the other cooking wines and oils at the grocery store. Otherwise, you can purchase true Marsala wine from the liquor store. Another great option, if you can’t find Marsala, is balsamic vinegar. 
  • I prefer to use tender chicken breasts for this recipe, but you can also make it with chicken cutlets, chicken thighs, or any other piece of chicken that your family prefers. 

Chicken Marsala Pasta Step by Step

Ingredients

  • 8 oz spaghetti noodles
  • 1 bunch roasted asparagus
  • 1 lb chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour
  • 1 1/2 cups marsala cooking wine
  • 3/4 cup almond milk
  • 1/4 cup vegan butter

Preparation

Boil the pasta in a large pot of water according to the directions until it is cooked al dente. 

Cook the asparagus as desired.

Place the flour on a plate, mix it with the salt and pepper, then dredge the chicken in flour mixture until it is well coated.

Heat the two tablespoons of olive oil in a large skillet over medium-high heat. Saute the chicken until it is golden brown and cooked through, with an internal temperature of 165 degrees F on an instant-read thermometer.

Transfer the cooked chicken to a plate and keep it warm.

Turn off the heat (especially with a gas cooktop) and carefully add the Marsala wine to the pan. Turn the heat back on to high and boil down the wine for a few minutes. Scrape the browned bits off the bottom of the pan.

Add the milk and butter to the pan and stir the creamy marsala sauce until it is bound together and thickens.

Put chicken pieces back in the sauce to heat again and coat them with the sauce.

Divide the cooked pasta among four serving plates and top it with the chicken, extra creamy sauce, and asparagus.

Chicken Marsala Pasta Leftovers

Storage: Store leftovers in an airtight container in the refrigerator for 1-2 days. 

Reheating: The best way to reheat the leftovers is in a skillet or saucepan over medium heat for 5-10 minutes until warmed through. If it seems dry, try adding a little bit of chicken stock or broth, water, or almond milk to the pan.

  3. I absolutely love chicken marsala. A lot of my family members are dairy-free, I actually thought I had a dairy intolerance for a year, so this is perfect. My dairy intolerance turned out to be an allergy to cashews. So, while I am trying to avoid dairy, I was eating and drinking cashew milk alternatives and making matters worse.
