Blackberry Crumble Bars are a delicious dessert with fresh fruit and a crumble topping baked to perfection.
Every summer, when our blackberry bushes produce fresh berries daily, we have so many blackberries to use in fresh desserts and freeze for later. We started tracking the number we picked every day and ended up with almost 2,000 juicy blackberries in about two months. The boys have really started to enjoy blackberries. We like to eat them fresh with a bit of sugar, in blackberry jam, add them to smoothies, make blackberry pie, and now make these easy blackberry crumble bars.
The bars start with a crust that is similar to a shortbread crust which then has a layer of fresh blackberries and sugar and is topped with a crumble mixture.

Blackberry Crumble Bars Step by Step
Ingredients
- 1 ½ cups all-purpose flour
- ¼ cup sugar
- ¼ cup light brown sugar
- ½ tsp baking powder
- ⅛ tsp salt
- 4 tbsp unsalted butter
- 1 egg
- 2 cups fresh blackberries
- 1 tbsp lemon juice
- ¼ cup sugar

Preparation
Preheat the oven to 375 degrees F and spray an 8×8 baking dish with Baker’s Joy, grease with cooking spray and flour the pan, or line with parchment paper.
Combine flour, sugar, brown sugar, baking powder, salt, butter, and egg in a food processor and pulse until it makes a crumbly dough.

Pour about ⅔ of the dough into the prepared baking pan and press it down with the bottom of a glass to even it out.

Use a rubber spatula to mix the blackberries, lemon juice, and remaining sugar in a large bowl.

Spread the blackberry mixture on top of the pressed crust.

Sprinkle the remaining flour mixture over the top of the blackberries.

Bake bars for about 35-40 minutes, until golden brown and bubbly.

Let the bars cool for about 10 minutes then remove and cut into 9 even pieces and place on a wire rack.

Blackberry Crumble Bars Leftovers
Storage: Let leftover blackberry bars come to room temperature then place them in an airtight container or cover with plastic wrap and refrigerate for up to 3 days.
Reheating: The blackberry crumb bars are delicious cold and warm. You can eat them straight from the refrigerator or warm them in the microwave for a few seconds.
Freezing: For the best results, place individual bars on a baking sheet with wax paper or parchment paper between the layers. Once the bars are frozen, wrap and move them to a freezer bag and freeze for up to 3 months. Thaw in the refrigerator overnight before serving.
