Jump to RecipeIn the spring, light and fresh desserts are perfect. Many are cheesecake based, but that doesn’t work for those who don’t care for cream cheese. White chocolate strawberry bars remind me of the texture of cheesecake, but not the same taste.
These end up being very fluffy when you are done. And using both dried and fresh strawberries lets you add strawberry flavors to the crust and top it with fresh strawberries. My boys don’t care for cooked strawberries, so this was a great way to please everyone in the family.
Saltine crackers are often used as the base of dessert bars. They work well because they don’t have a lot of flavor, so they let the dessert really shine. Saltines also add just a bit of salty taste to a dessert to give it that sweet and salty combination.

White Chocolate Strawberry Dessert Bars Step by Step
Ingredients
- 1 oz dried strawberries
- 4 oz saltine crackers
- 1 egg white
- 1 1/2 tbsp unsalted butter (melted)
- 1/3 cup heavy whipping cream
- 5 1/2 oz white chocolate baking bar
- 1/2 cup vanilla yogurt
- 2 oz strawberries

Preparation
Preheat the oven to 350F.
Use a food processor to grind the freeze-dried strawberries into a powder and set aside.

Add saltines to the food processor and pulse until crumbled and set aside.

In a medium bowl, mix 1 tbsp of the strawberry powder with the egg white. Beat with an electric mixer until stiff peaks form, about 1 minute.

Add the saltines and melted butter and stir to combine.

Press the mixture into the bottom of a parchment paper-lined square baking dish, making sure to press firmly into place. Bake the crust for 10 minutes, until golden brown. Remove from the oven and cool on a wire rack for about 30 minutes.

Meanwhile, melt the white chocolate according to the directions then let it cool for 15 minutes, stirring often.

Place the heavy whipping cream in a medium bowl and beat with an electric mixer for about 2 minutes, until stiff peaks form.

Fold the melted chocolate and yogurt into the whipped cream.

Pour the chocolate mixture onto the cooled crust.

Sprinkle with 3 tsp of the strawberry powder. Chill for 1 hour. Cut into square pieces and serve chilled garnished with sliced fresh strawberries.

Leftovers
Store leftover white chocolate strawberry dessert bars in an airtight container in the refrigerator. If you know you will have leftovers, it’s best to wait to add the fresh strawberries until you are ready to serve so they don’t get soft.

Since you only need fresh strawberries to top the dessert bars, you could likely use some that are frozen if you let them thaw out.
