I actually made this last night after picking some fresh blackberries from the bushes in our backyard. The only problem? I made way less sorbet than I meant to. It disappeared quickly! Thankfully, it’s easy to make again. This recipe uses a simple syrup made with cane sugar, and the whole process—from making the sugar syrup to churning it in the ice cream maker—takes just a bit of prep and patience.

​So far, we have gotten a few cups of blackberries fresh off the blackberry bush. Last year, we collected almost 2,000 berries and we are hoping for even more with this year’s harvest!

Blackberry Sorbet Step by Step

Ingredients

  • 4 cups fresh blackberries (or use frozen fruit if out of season)
  • ¾ cup cane sugar (or white sugar)
  • ½ cup water
  • 1 tablespoon corn syrup
  • 1 tablespoon fresh lemon juice (or lime juice)

Preparation

In a small saucepan, combine the water, cane sugar, and corn syrup. 

Heat over medium heat, stirring with a wooden spoon until the sugar dissolves completely. 

Let the simple syrup cool to room temperature. You can speed this up by transferring it to a medium bowl and placing it in the fridge for 15–20 minutes.

Place the fresh berries and cooled syrup in a food processor or stand mixer fitted with a whisk attachment. 

Blend until smooth and combine into a luscious blackberry mixture. 

To get an extra silky texture, pour the blackberry purée through a fine mesh sieve into a large bowl, discarding the seeds and pulp.

Stir in the fresh lemon juice or lime juice to brighten the blackberry flavor.

Cover the bowl with plastic wrap and refrigerate until the sorbet base is cold—about 2–3 hours. The colder the sorbet mixture, the better it churns.

Pour the chilled blackberry puree into your ice cream machine (or ice cream maker) and churn according to the manufacturer’s instructions.

Use a rubber spatula to transfer the finished sorbet to a safe container. 

Press a piece of plastic wrap directly onto the surface to prevent ice crystals from forming. 

Freeze for at least 2 hours in your freezer section until firm.

Serve it in chilled bowls, layered over cake, or alongside other sorbet recipes for a colorful summer dessert board. 

Blackberry Sorbet Leftovers

Storage: Store any leftover blackberry sorbet in the freezer in an airtight, freezer-safe container with a piece of plastic wrap pressed directly onto the surface to minimize ice crystals. For the best texture and flavor, enjoy within 1–2 weeks. Let it sit at room temperature for 5–10 minutes before scooping.
