Heat the oil in a large skillet over medium-high heat
In a large mixing bowl, combine the brown rice flour, chili powder, garlic powder, onion powder, paprika, and pepper
Press both sides of each pork chop in the seasoning mixture to coat then place in the warm pan
Cook for about 5 minutes, until the bottom starts to sear
Flip the pork, reduce the heat to medium-low, then cover the skillet and cook another 5-10 minutes, depending on the thickness of the pork chops, until cooked through
Remove the pork chops from the pan and cover to keep warm
Add the chicken broth, apple cider vinegar, and honey to the pan, making sure to scrape any stuck bits of pork or seasoning from the pan into the gravy
Bring to a simmer and cook for about 5-10 minutes, until reduced by half
Remove the pan from the heat and add the butter, stirring until it just melts
Place the pork back in the pan and flip at least once so the gravy is on both sides of the pork
Serve immediately with more gravy spooned over the pork chops garnished with parsley if desired
