Ingredients

Instructions
Beat the eggs in a shallow bowl
Spread the potato flakes out on a plate
Dredge the pork in the eggs then coat with the potato flakes, pressing to make sure the potato sticks to the pork
Heat the butter and oil in a large skillet over medium-high heat until the butter had melted
Add the pork to the skillet and cook until browned and crispy, until cooked through, about 5-7 minutes per side
Transfer to a plate lined with paper towels to absorb extra oil
Serve with lemon wedges if desired
