Ingredients

olive oil

unsalted butter

large shallot
finely chopped

cloves
garlic

tomato paste

red pepper flakes

white cooking wine
1/2

chicken broth

heavy cream

freshly grated Parmesan cheese

black pepper
Zest of 1 lemon

fresh lemon juice

lobster meat

fresh green onions
chopped
Salt
to taste

package store-bought lobster ravioli or homemade ravioli
Instructions
Cook ravioli as directed, reserve pasta water
Sauté shallot and garlic in butter and oil
Stir in tomato paste, and deglaze with wine
Add stock, cream, lemon, cheese, and seasonings
Fold in the chunks of lobster meat
Bring to a boil, then turn to low and simmer for 5-10 minutes, until the lobster is warmed
Toss with ravioli and serve warm
