Sauce:

sour cream

Instructions
Preheat the oven to 400F
In a large mixing bowl, toss the shrimp, bell pepper, onion, oil, chili powder, cumin, and 1/2 tsp salt
Spread the shrimp mixture out on a rimmed baking sheet
Roast in the preheated oven until the shrimp are cooked through, about 9-10 minutes
Meanwhile, prepare the sauce in a small mixing bowl by whisking the ingredients together
Transfer the shrimp to a plate and cover to keep warm
Turn the broiler to high and broil the vegetables until they are slightly charred, about 3-4 minutes
Spoon the shrimp and vegetables evenly onto the tortillas and top with the sauce
Sprinkle with cilantro leaves and serve with lime wedges
