Feta-Topped Chicken

Quick, easy one-pan meal. Great for weeknight dinners. Recipe for chicken breasts marinated in balsamic vinaigrette with tomato and feta cheese on top.

Ingredients

  • 2 chicken breasts boneless, skinless
  • 1/2 cup balsamic vinaigrette dressing
  • 1 tbsp italian seasoning
  • 1/2 tsp pepper
  • 1/2 tomato sliced
  • 1/4 cup feta cheese

Instructions

  • In a large skillet, saute the chicken with the vinaigrette and seasonings until cooked through
  • Once the chicken is cooked, top with two tomato slices each and 1/2 of the feta cheese
  • Cover and cook about 5 more minutes, until the cheese is softened and warm
