Ingredients

  • 3 cups cashews

Crust

  • 1/2 cup cashews
  • 2 cups almonds
  • 1/2 cup maple syrup

Coffee Cream

  • 2-4 tsp coffee dissolved into 2-4 tsp water
  • 4 tbsp almond milk
  • 4 tbsp maple syrup

Chocolate Cream

  • 1/2 cup cocoa powder
  • 10 tbsp almond milk
  • 5 tbsp maple syrup

Instructions

Prepare Cashews

  • Soak the cashews in water for one hour, then drain

Crust

  • Cut baking paper into small strips to place in the cupcake pan to easily remove the bites after they are frozen
  • Put the cashews and almonds into a blender and pulse until you have a coarse mixture
  • Add the maple syrup, then pulse the mixture again until the ingredients start clumping together
  • Place 2 tbsp of the crust into the bottom of each cup of a cupcake pan and flatten
  • Put the cupcake pan in the freezer while you prepare the next layer

Coffee Cream

  • Place 1 1/2 cups of the soaked cashews in a blender with the rest of the coffee cream ingredients and blend until smooth
  • Remove the cupcake pan from the freezer and spoon about 1-2 tbsp of the coffee cream onto each crust
  • Immediately return the pan to the freezer

Chocolate Cream

  • Place 1 1/2 cups of the soaked cashews in a blender with the rest of the chocolate cream ingredients and blend until smooth
  • Remove the cupcake pan from the freezer and spoon about 1-2 tbsp of the coffee cream onto each coffee cream layer
  • Immediately return the pan to the freezer and freeze for at least one hour

Serving

  • Remove the pan from the freezer
  • Pull the bites out using the baking strips
  • Allow the bites to thaw for about 10-15 minutes before serving

Notes

If you get some remaining crust mixture, you can shape it into little balls and then freeze them separately. These can make for cute decorations on top of the bites once everything is finished.
