  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 8 tbsp butter
  • 1/2 cup heavy whipping cream
  • 2 tbsp treacle syrup
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

  • Prepare an 8x8 baking dish by greasing or lining with parchment paper
  • In a medium-sized saucepan over medium-high heat combine everything except the vanilla extract
  • Cook until the butter is melted, stirring constantly
  • Use a wet pastry brush to remove any sugar crystals from the edge of the pan while stirring
  • Cook without stirring until a candy thermometer reaches 240F then remove from the heat
  • Immediately stir in the vanilla extract and let the fudge cool for 5 minutes
  • Stir vigorously for 15-20 minutes, until the fudge thickens and loses its glossy sheen
  • Pour the fudge into the prepared baking dish and let cool for at least one hour
  • Carefully cut the fudge into bars and serve
