Using the slow cooker is a great way to cook an easy warm meal. Try this Beef Roast for a full meal all at once that's ready when you get home!

Equipment

Ingredients

  • 2 lb beef roast
  • 3 lbs baby red potatoes quartered
  • 1 cup carrots shredded
  • 2 stalks celery chopped
  • 6 oz tomato paste
  • 1 cup beef broth
  • 2 tbsp pepper
  • 3 tbsp garlic powder

Instructions

  • Place the beef in the bottom of the slow cooker
  • Cut the potatoes into bite-sized pieces and lay on top of the beef
  • Add the rest of the vegetables, tomato paste, beef broth, and seasonings to the slow cooker
  • Stir as much as possible
  • Cover and cook for about 8 hours on low or 4 hours on high
