– 1 lb ground beef – 2 russet potatoes (cubed and cooked) – 4 large leeks (white part only, cut into 1/2″ slices) – 1/2 cup water – 2 tbsp olive oil – 1 tsp salt – 1/2 tsp pepper – 1/2 tsp dill weed
In a large skillet, brown the ground beef then drain
Add the cooked potatoes, leeks, water, oil, salt, pepper, and dill then bring to a boil
Reduce the heat and simmer, uncovered, until the leeks are tender. Serve immediately.
