Sun-Dried Tomato Chicken is an easy one-pan meal that adds the tangy, chewy taste of sun-dried tomatoes to skillet-cooked chicken.
Jump to RecipeSun-dried tomatoes are a great way to add a sweet and tart flavor to any dish. I’ve used them in a few meals before such as tomato caper pork, and this one is no different. I really like the flavor of sun-dried tomatoes, even though I’m not a big fan of tomatoes.
They are strong, so a bit too much for the boys. Because of that, I don’t cook with them as often as I normally would like to. I save it for nights that they aren’t home for dinner.

Step by Step
Ingredients
- 1 lb chicken breast
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp sun-dried tomato oil
- 1 tbsp olive oil
- 1/2 cup sun-dried tomatoes
- 1/2 cup yellow onion, diced
- 2 green onions, diced
- 1/2 cup white cooking wine
- 1/2 cup heavy whipping cream
- 2 tbsp parsley
Preparation
Season the chicken with half of the salt and pepper. In a large skillet, heat the sun-dried tomato oil and olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 10-15 minutes.

Remove the chicken from the pan. Add the sun-dried tomatoes, yellow onion, and green onion to the pan and cook for 1 minute.

Increase the heat to high and add the cooking wine and heavy cream. Stir until most of the liquid has evaporated, about 2-3 minutes. Reduce the heat to medium and add the remaining salt and pepper.

Simmer for 2 minutes. Return the chicken to the pan and turn to coat with the salt. Serve the chicken smothered in the cream sauce and garnish with parsley.

Leftovers
Any extra sun-dried tomato chicken can be stored in the refrigerator in an airtight container. Keep it for up to 3 days and reheat in a skillet or in the oven.
