Sausage Potato and Kale Soup

When you need a hearty, warm, filling meal, try sausage potato and kale soup. It takes only 15 minutes of hands-on time in one large pan.

Jump to Recipe

When the weather cools down, we want all the warm, hearty, filling soups. This one has a little bit of everything in it. There’s meat, potatoes, cream, veggies, and greens. It’s a perfect winter dinner, and easy to make, too!

The best part is that this is all cooked in one big pot. You don’t have a lot to clean up afterwards which is good since you’ll be stuffed (in a good way!).

I tried making this dairy-free one time by subbing some coconut cream in for the half-and-half. Don’t do it. Just trust me. This is a savory soup and that makes it way too sweet. If you know another substitute for the half-and-half you can try that. But you don’t want any sweetness to this soup.

Sausage Potato and Kale Soup Leftovers

Leftover soup will keep in the refrigerator for a few days. Because of the potatoes, I do not recommend freezing leftovers. They will break down and make it very starchy.

Sausages, Potatoes, and Kale, this seems the perfect soup to me…I love soups and have them every single day, especially in Winter. I can’t wait to make it.

  2. You’re so right soups and stews and things like that are perfect for this time of the year. I’ve never managed to make a proper soup before, it’s either too watery or too thick x
