When you need a hearty, warm, filling meal, try sausage potato and kale soup. It takes only 15 minutes of hands-on time in one large pan.
When the weather cools down, we want all the warm, hearty, filling soups. This one has a little bit of everything in it. There’s meat, potatoes, cream, veggies, and greens. It’s a perfect winter dinner, and easy to make, too!
The best part is that this is all cooked in one big pot. You don’t have a lot to clean up afterwards which is good since you’ll be stuffed (in a good way!).
I tried making this dairy-free one time by subbing some coconut cream in for the half-and-half. Don’t do it. Just trust me. This is a savory soup and that makes it way too sweet. If you know another substitute for the half-and-half you can try that. But you don’t want any sweetness to this soup.
Serving Suggestions & Tips
- For the cubed potatoes, you can use any type of potato you prefer such as russet potatoes, Yukon gold potatoes, or red potatoes.
- Add a little bit of olive oil to the pan before browning the sausage to prevent it from sticking to the bottom.
- Change the flavor by replacing the Italian sausage with sweet Italian sausage, turkey sausage, Spanish chorizo, hot Italian sausage, spicy sausage, or another pork sausage.
- Serve the potato soup recipe with a side of crusty bread for an easy dinner any time of year.
- Garnish your sausage potato soup with shredded Parmesan cheese, or more hearty kale.
- Mix in other ingredients as desired, such as white beans, homemade stock, minced garlic, or tomato paste.

Sausage Potato and Kale Soup Step by Step
Ingredients
- 1 pound ground mild Italian sausage
- 2 cups half-and-half
- 4 cups milk, divided
- 3 cups cubed potatoes
- 2 cups chicken broth
- 1 onion, chopped
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp ground black pepper
- 2 cups torn fresh kale leaves

Preparation
Heat a large stock pot or Dutch oven over medium-high heat.
Crumble the sausage into the prepared pot and cook until the sausage has browned, about 10 minutes.

Drain and discard the grease. Stir the half-and-half, potatoes, chicken broth, milk, onion, oregano, and red pepper flakes into the cooked sausage.

Bring to a boil, then reduce heat to low. Simmer until potatoes are tender, about 30 minutes. Check for tender potatoes by sticking them with a fork. If it goes in easily, they are done.

Season with black pepper and stir the curly kale into soup.

Simmer until the kale is tender, about 10-15 minutes.
Scoop into a serving bowl and serve warm.

Sausage Potato and Kale Soup Leftovers
Storage: Leftover soup will keep in an airtight container in the refrigerator for a few days.
Reheating: For the best results, reheat the soup in a large pot over medium heat until warmed through. If it’s too dry, add a little bit of chicken stock, heavy cream, milk, or water.
Freezing: Because of the potatoes, I do not recommend freezing leftovers. They will break down and make it very starchy.
