Pineapple Bread Casserole

No matter the time of the year, pineapple bread casserole is a great side dish when you want that tropical flavor with your meal.

Pineapple is one of my favorite fruits. While it’s usually something we prefer in the summer, I enjoy pineapple any time of the year. This originally started as a way to make pineapple stuffing, but it ended up as more of a pineapple bread casserole.

Justin said it reminded him a bit of bread pudding, too. But it’s not quite the same. So we weren’t quite sure what to call this one. It has pineapple in it. The dish is made with torn-up bread like stuffing. And it’s made in a casserole dish. Pineapple Bread Casserole it is!

Step by Step

Ingredients

  • 4 tbsp butter, softened
  • 3/4 cup sugar
  • 4 eggs
  • 20 oz crushed pineapple, drained
  • 5 slices white bread

Preparation

Preheat the oven to 350F and grease a 9×13 casserole dish.

In a mixing bowl, cream together the softened butter and sugar.

Add the eggs, one at a time, until smooth.

Mix in the drained crushed pineapple.

Tear the slices of bread into small pieces and gently fold them into the mixture.

Transfer the stuffing mixture to the casserole dish.

Bake for 1 hour, until the mixture is set and the bread is golden brown.

Leftovers

Any extra pineapple bread casserole can be covered and stored in the refrigerator. I reheated the entire dish in the oven when we had it as a side the second night. You could also microwave just a small amount for yourself. It doesn’t take long to reheat.
