Jump to RecipeA few weeks ago I had a LOT of Vidalia onions left from a client recipe. I needed one and thanks to grocery shortages the only way I could get one was in a full bag. So we started thinking of ways to use up some of the onions. My first thought was French Onion Soup, but it was too hot for soup at that time. We had some chicken thawed, the onions, and an Instant Pot ready to go. Mix that all together and we ended up with Instant Pot French Onion Roast Chicken.
The Instant Pot is great since you can do so many settings in one appliance. Then, when you’re all done, there’s only one dish to clean! This dish has a very strong flavor, just like French Onion Soup. Adding the chicken also adds protein and substance to the meal, so it goes well together.
I like to make mashed potatoes as a side dish. You’ll end up with a delicious gravy in the pot and it’s perfect over a warm scoop of mashed potatoes.

Instant Pot French Onion Roast Chicken Step by Step
Ingredients
- 2 tbsp olive oil
- 4 Vidalia onions, sliced vertically
- 1 lb chicken breast, boneless, skinless
- 1/4 cup white cooking wine
- 1 stick butter, unsalted
- 1 cube beef bouillon
- 1/2 cup water
- 2 tbsp thyme
- 2 tsp salt
- 1 tsp pepper
- 1 tbsp cornstarch
- 1 tbsp water

Preparation
Pour the olive oil and sliced onions into the inner pot of the instant pot.
Set to saute and cook, stirring occasionally, for 5-7 minutes, until the onions start to soften.

Add the chicken, wine, butter, beef bouillon, 1/2 cup water, and seasonings then stir.

Close the lid and set it to high pressure for 12 minutes.

Manually release the pressure and remove the chicken from the pot.
In a small bowl, whisk the cornstarch and 1 tbsp water then pour into the pot and stir.

Serve the chicken smothered in gravy.

Instant Pot French Onion Roast Chicken Leftovers
Storage: Place any leftover French Onion Roast Chicken in an airtight container. I recommend storing it all together as the chicken will absorb the flavor fo the gravy.
Reheating: Reheat leftovers in a skillet over medium heat until warmed through, or microwave it all together.
Freezing: Due to the gravy consistency, I don’t recommend freezing leftovers.
