Grilled Chicken with Tomato Salsa is a quick and easy weeknight meal that can be made in less than 30 minutes with only a few ingredients.Jump to Recipe
You know those nights that you have no idea what you are going to make for dinner? Or maybe the meal you had planned just does not sound good at all? Yeah, this recipe for Grilled Chicken with Tomato Salsa comes from one of those nights.
I had taken the chicken out of the freezer and planned to make BBQ Chicken & Black Bean Tacos again since we really enjoyed those. But when it came time to make dinner, none of us really wanted that. So, we went to Plan B: grilled chicken!
Luckily, it was a nice evening. In other words, it wasn’t pouring rain as it had been for over a week. So Justin went out and grilled the chicken. Since we weren’t planning this, there was no marinade on the chicken. Just a couple of boneless, skinless chicken breasts plopped on the grill and cooked until done.
He brought the chicken inside and we said, “Now what?” Well, now we search the refrigerator and pantry for something to make with the chicken. At the time we were making this, we were about to leave on vacation so our food supplies were running low. Justin found a tomato and decided to make a quick, simple salsa with it.
And, of course, since the boys were staying the night with Justin’s parents, we went ahead and made an “adult drink” to go with our meal. We mixed a few things together to make a strawberry pineapple daiquiri.
Even though the meal was thrown together, it came out much better than I thought! The chicken looked plain for a while. But adding the tomato salsa made all the difference.
Step by Step
Grill two boneless, skinless chicken breasts over medium heat. If you don’t have a grill or don’t want to grill, you can pan-fry the chicken in a tablespoon of oil until it’s cooked through.
While the chicken is cooking, dice the tomato.
Mix it with lime juice, fresh or dried green onions, and fresh or dried cilantro.
Once the chicken is cooked, top it with the simple tomato salsa and serve warm! It really doesn’t get much easier than that!!

I love an easy and delicious meal!! I often do a similar dish but I use pico de gallo.
We thought about using pico, but we didn’t have any onions at the time, so made it a tomato salsa 🙂
I love fresh tomatoes during the summer months. They are so flavorful and delicious.
Yes! We love growing tomatoes out in our garden when we can.

This is such a great one, and doesn’t actually require much use of the kitchen since it’s done on the grill!
Seriously — Can you move in and cook for me? 🙂
Hah, you aren’t the first person to ask me that 😉
Sometimes the simplest meals are the best. Love it!
I agree! Sometimes we try to do so much that the flavors get muddled up.

LOL we’re the same. As soon as we see a sliver of sunshine we’re outside grilling something. This is a great weeknight option! We have been running out of ideas lately.
Yep! As soon as it’s warm enough, we are outside almost every evening grilling and playing in the yard.
Now you are talking! I have just been looking for a tomato salsa recipe so I will be deffo pinching this for the weekend xx
It was so easy to make, too!
I have never had salsa with chicken! I will have to try this out and tell how it is!
This was the first time I tried it, too, and it actually works better than I would have thought!
I prefer my chicken breasts a la plancha but I’ll definitely try your grilled version! it sounds super healthy.
We pan-fry the chicken when the weather isn’t so great. But as soon as it is we are outside. The recipe should work still, though, even if you prefer a pan to the grill.
