You know those nights that you have no idea what you are going to make for dinner? Or maybe the meal you had planned just does not sound good at all? Yeah, this recipe comes from one of those nights.
I had taken the chicken out of the freezer and planned to make BBQ Chicken & Black Bean Tacos again since we really enjoyed those. But when it came time to make dinner, none of us really wanted that. So, we went to plan B: grilled chicken!
Luckily, it was a nice evening (in other words, it wasn’t pouring like it had been for over a week) so Justin went out and grilled the chicken. Since we weren’t planning this, there was no marinade on the chicken. Just a couple of boneless, skinless chicken breasts plopped on the grill and cooked until done.
He brought the chicken inside and we said, “Now what?” Well, now we search the refrigerator and pantry for something to make with the chicken. At the time we were making this, we were about to leave on vacation so our food supplies were running low. Justin found a tomato and decided to make a quick, simple salsa with it.
And, of course, since the boys were staying the night with Justin’s parents, we went ahead and made an “adult drink” to go with our meal. We mixed a few things together to make a strawberry pineapple daiquiri.
Even though the meal was thrown together, it came out much better than I thought! Especially considering how plain the chicken looked when it was grilled with nothing on it.
To make Grilled Chicken with Tomato Salsa, you want to start by grilling two boneless, skinless chicken breasts over medium heat until they are cooked through. If you don’t have a grill or don’t want to grill, you can pan-fry the chicken in a tablespoon of oil until it’s cooked through.
While the chicken is cooking, dice two tomatoes and mix them with lime juice, fresh or dried green onions, and fresh or dried cilantro.
Once the chicken is cooked, top it with the simple tomato salsa and serve warm! It really doesn’t get much easier than that!!

Grilled Chicken with Tomato Salsa
Ingredients
- 2 chicken breasts (boneless, skinless)
- 1 tomato (large)
- 1 tsp lime juice
- 1 tbsp green onion (sliced)
- 1 tsp cilantro
Instructions
- Grill chicken over medium heat until cooked through, about 15-20 minutes
- Meanwhile, dice the tomato then mix in a small bowl with the lime juice, sliced green onion, and cilantro
- Serve the chicken topped with the tomato salsa
We eat such a lot of chicken in our house… my husband would love this! It looks delicious and so healthy too!
