Jump to RecipeSince Ryan’s birthday fell a week after the entire country shut down, we had to cancel so many things. We were supposed to go camping with the Cub Scouts on the day of his birthday and his party a week later was canceled. In lieu of that, I asked people to mail him cards. Well, my sister reached out to her gardening group and a few people also sent him some seeds to start a garden!
We weren’t planning to plant much of a garden this year, but then when it was harder to get food, we decided we needed to do it. So the seeds were very helpful.
This year, we planted radishes, carrots, mint, basil, tomatoes, cucumbers, and green onions. The radishes and carrots grew very well in the spring here and we were able to harvest a lot of them. The boys enjoyed watching everything grow and helped water the garden and pull the vegetables as they were ready.


Garlic-Roasted Radishes Step by Step
Preheat the oven to 425F and prepare the radishes. Trim the stem and roots off of the radishes and cut them in half.

Place the radishes in a medium mixing bowl with melted coconut oil, salt, and pepper.

Toss to coat. Note: If the radishes are cold, the coconut oil will harden on them. It will melt again in the oven.

Spread the radishes out on a large rimmed baking sheet. Bake for 20 minutes, flipping halfway through.

Remove the pan from the oven and add the minced garlic, parsley, and dill.

Set the broiler to low and broil for about 5 minutes. Stir one more time to coat and serve the garlic-roasted radishes warm.

Garlic-Roasted Radishes Leftovers
Store any leftovers in a container in the refrigerator. To reheat, bake again for about 5-10 minutes on 350F to warm the radishes. Watch closely so they don’t burn. Or you can heat them in a toaster oven on the warm setting.

I am not a huge raddish person but I can try with this recipe haha. I do love them in salads!

The local radishes we have here in the Philippines are different but i wonder if they do taste the same.. What we have here are the long white ones (shapes like carrots).. But i do love radishes.. Especially the pickled ones.. They are indeed excellent side dish.. Thank you for sharing this recipe
