Jump to RecipeI started making this easy chicken casserole way back in my college years. It was an easy meal to put together without a lot of skills since I was still learning to cook. The best part is that this casserole recipe has a simple ingredients list and very easy steps.
We liked having a meal that tasted more like a home-cooked meal rather than buying cheap freezer meals. It wasn’t perfect, and I’ve since learned how to make a much more extensive variety.
But, if you want something quick and easy, this is the perfect meal for you! My whole family still enjoys this when I make it and it’s perfect for busy weeknights.
Another great thing about easy chicken casserole recipes is how great they are the next day. Honestly, I sometimes like this better as leftovers than I do when it’s first made. The creamy sauce has time to really infuse flavor into the chicken and stuffing when it sits for a day.
Notes about Ingredients
You can use a can of cream of chicken soup or make your own. When I have the time, I always prefer to make it from scratch. The recipe uses simple ingredients: butter, flour, chicken broth, milk, garlic powder, and black pepper. It takes about an extra 30 minutes but is well worth the effort.
Chicken casserole is a great way to use up leftover chicken. Or, you can also get a store-bought rotisserie chicken. If you use rotisserie chicken, for the best results, make sure to keep it in large pieces when you pull it from the bones. You will likely have leftover rotisserie chicken that you can use in other recipes as well.
While we like the taste of the herb stuffing, you can also substitute for chicken stuffing or other flavors.
Variation Ideas
This chicken casserole recipe is great as it is and is full of flavor. I like to keep it simple since that’s the idea behind this recipe. Although, I know some people like to add things and dress it up a bit which is perfectly normal.
Try adding a little bit of shredded cheddar cheese, parmesan cheese, or crushed Ritz crackers to the top of the casserole. You could also top with red pepper flakes if you want a kick to your casserole.
You could also mix in green beans, sliced or diced bell peppers, black beans, broccoli florets, diced onion, or crispy bacon.
If you cook up some rice to add in, you could make this a rice casserole as well.

Easy Chicken Casserole Step by Step
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 1 package herb stuffing
- 2 cans cream of chicken soup
- 1/3 cup sour cream

Preparation
Preheat the oven to 400F. Prepare the stuffing as directed and set it aside.

Mix the chicken, cream of chicken soup, and sour cream in a 13×9 baking dish or casserole dish.

Top with the stuffing.

Bake 30 minutes or until the chicken is cooked through.

Leftovers
Storage: The leftover easy chicken casserole can be stored in the baking dish as long as it’s covered with aluminum foil or plastic wrap. Keep refrigerated for up to 3 days. For a small amount of leftovers, put it in an airtight container and refrigerate for 2-3 days.
Reheating: Reheat by either cooking the entire casserole again in the oven until warmed or cook in a saucepot over medium heat.
