What makes this chicken special? Well, I think it has to do with the crunch that the panko gives it. Most recipes use bread crumbs for a coating, but I like the extra flavor that comes from using panko.
I also use almond milk instead of cow’s milk to add that slight nutty taste. It isn’t much, but it does make a difference. But, if you prefer, you can also use whole milk in its place.

Ingredients
- 1 lb chicken breast, boneless, skinless
- 2 tsp salt
- 1 1/2 tsp pepper
- 1 egg
- 1/4 cup almond milk
- 1 cup panko
- 1 1/2 tsp Italian seasoning
- 1/2 tsp paprika
- 2 tbsp butter
- 2 tbsp olive oil
- 2 cups pan gravy
Preparation
Place the chicken between two pieces of plastic wrap and flatten to about 3/4 inch thickness. Sprinkle the chicken with 1 tsp salt and 1 tsp pepper.

In a shallow bowl, whisk the egg and milk. In another bowl, stir the panko, Italian seasoning, paprika, and remaining salt and pepper. Dredge each piece of chicken in the egg mixture then the panko mixture.

Melt the butter and olive oil in a large skillet over medium heat. Cook the chicken for about 7-10 minutes, until done, flipping at least once.Serve the chicken covered with pan gravy.

Leftovers
Store the leftover crispy chicken in an airtight container in the refrigerator. It will last up to 3 days. Reheat in a microwave or on a skillet over medium heat until warmed through. If you are serving with the pan gravy, make sure to store that in a separate container. Otherwise, the gravy will make the chicken soggy.

Crispy Chicken FAQs
No, it doesn’t fall under either of those restrictions. The panko has too many carbs and it contains bits of bread, therefore includes wheat.
Typically, this means the oil wasn’t hot enough when you added the chicken. You want to make sure the oil is hot and ready before adding the chicken. Otherwise, the breading will absorb the oil instead of fry in it.

Pan gravy is actually simple….. it’s just gravy made in a skillet. I have a recipe for a few types of gravy on here, and that’s the easiest.
I love crispy chicken! NOt a huge gravy person but my husband LOVES it!
