No, it doesn’t fall under either of those restrictions. The panko has too many carbs and it contains bits of bread, therefore includes wheat.
Typically, this means the oil wasn’t hot enough when you added the chicken. You want to make sure the oil is hot and ready before adding the chicken. Otherwise, the breading will absorb the oil instead of fry in it.

Pan gravy is actually simple….. it’s just gravy made in a skillet. I have a recipe for a few types of gravy on here, and that’s the easiest.
