Chicken Orzo Pasta with Vegetables

Use broth and orzo pasta as a base for a delicious meal with chicken, spinach, vegetables, and so much flavor. Plus, it reheats well.

I absolutely love orzo pasta! Unfortunately, I have very few recipes that use orzo, so I am always looking for more. When I came across this recipe from the 100 Days of Real Food website, I knew I had to make it. Although, hers is a soup and I was not in the mood for a soup, so I changed a few things as I made the meal.

A few weeks ago, we had girls weekend. All of the women in my family flew to Texas. There were 7 of us total, and we took a road trip over to San Antonio for a night to visit the River Walk. They all stayed at my house for two of the three nights they were in Texas, and we had some leftovers in the refrigerator.

One of the leftovers was this chicken orzo pasta meal, and they all raved about it. I have been asked multiple times when the recipe will be on here because they want to make it at home for themselves. The leftovers were in the fridge for at least a couple of days before they had it, so it lasts for a while and reheats well.

Step by Step

In a medium sauce pot, boil the chicken until it is cooked through, then shred the chicken.

Meanwhile, in a large stockpot, heat the olive oil over medium heat. Chop the onion and carrots and add those to the oil. Cook for about 3-5 minutes, until they have softened.

Stir in the garlic and cook another few minutes, until the garlic is fragrant.

Add the red pepper flakes and stir into the vegetables.

Pour the vegetable broth into the vegetables and bring to a boil.

Add the orzo and cook for about 6-8 minutes, until the pasta is al dente.

Stir in the chicken, spinach, heavy cream, lemon juice, and salt.

Lower the heat to medium-low and simmer until everything is heated through and the spinach has wilted.

Sprinkle with dill to garnish.

Serve warm. Leftovers can be saved and reheated for 3-5 days.

  2. This looks SO delish! Fun bonus pics of the Riverwalk – I haven’t been there in probably about 2 decades! And I still LOVE your genius paddle-shredding technique for chicken – I remember the first time I tried it, I was floored at how well it worked!

    1. I’ve been to San Antonio twice in a year now, but had never been before that. And yes, the paddle chicken shredding is amazing! It’s so easy and you can do it while the chicken is still steaming hot so you don’t have to wait for it to cool enough to handle!

  4. What a great dish! I’d try it for making my lunches in advance, trying to eat less junk when I’m short in time for cooking, so I like meals that can be kept for a couple of dayS!
