During the cool winter days, having a nice warm bowl of soup is a perfect way to end the day. We have been trying to work more vegetables into our meals, and this week’s vegetable was broccoli.
I wanted to make broccoli soup since that’s usually a good way to get kids (and adults) to try new vegetables without them being overwhelming. But I also knew if it was just broccoli, the boys likely wouldn’t be as willing to try it.
In the past, I’ve used Ramen noodles in ways besides just the poor-college-kid warm-it-up-and-eat-it method. The packages are great options to add some noodles and flavor to a meal.
Ingredients Options
If you don’t want to use the chicken flavoring in the noodles, you can substitute chicken broth for the water in the recipe. This will cut down on the sodium, especially if you use a low-sodium chicken broth.
To make the meal vegan, you can also use vegetable-flavored ramen noodles, or substitute with vegetable broth. In this case, you would also need to omit the shredded cheddar cheese or replace it with a vegan option.
For a more hearty flavor, try using the beef ramen noodles and some beef broth.
What can be used to garnish the broccoli soup?
There are a few options for adding a garnish to the soup. My favorite was a sliced hard-boiled egg. But you can try other things as well, depending on your taste preferences.
- Sliced hard-boiled egg
- Sliced green onions
- Sesame seed
- Shredded cheddar cheese
- Bell pepper
- Sour cream
- Fresh ginger
- Snap peas
- Crunchy chow mein noodles
- Low sodium soy sauce
What can be added to the soup to make it more hearty?
If you are looking for a more hearty soup, you can try adding meat to the soup. I would suggest starting with shredded chicken, slices of flank steak or sirloin steak, or cooked ground beef.

Broccoli Soup with Ramen Noodles Step by Step
Ingredients
- 5 cups water
- 12 oz broccoli florets, frozen
- 2 pkgs chicken ramen noodles
- 1/4 tsp garlic powder
- 1 1/2 cups cheddar cheese, shredded

Preparation
Bring the water to a boil in a large stockpot.
Add the broccoli and return to a boil, then reduce the heat to medium-high and simmer for 3-5 minutes to slightly soften.

Use an immersion blender in pulses to partially blend the broccoli, leaving some chunks.
Return the water to a boil, break the ramen noodles into small pieces, and add to the stockpot.

Cook for about 2-3 minutes, stirring occasionally.
Add the ramen flavor packets, garlic powder, and cheddar cheese, stirring until the cheese is melted.

Boil for about 5 minutes, stirring often so the cheese doesn’t stick to the bottom of the pan.
Serve immediately.

Leftovers
Storage: Store remaining broccoli ramen soup in an airtight container in the refrigerator for 2-3 days.
Reheating: The best way to reheat the soup is in a saucepan on the stovetop over medium heat. Stir occasionally until warmed through. If it is dry, add a little bit of chicken broth or water as it cooks.
Freezing: Due to the ramen noodles, I don’t suggest freezing this soup. The noodles will lose their texture and break down into the soup during the freezing, thawing, and reheating process.
