Buffalo Chicken Dip

An easy appetizer or pot luck recipe is Buffalo Chicken Dip. It’s spicy, tangy, and cheesy with an addictive flavor served on crackers.

The first time I had a dip similar to this, it was called “crack chicken” because it’s so addictive. We were at our annual beach vacation and one of our friends brought it for the welcome party that they host every week.

And wouldn’t you know, he was right. It’s delicious and addictive and it was also gone quickly!

Buffalo chicken dip makes a great appetizer for a party or can be perfect to bring to a pot luck. Just make sure you have a lot as it doesn’t last long.

You can also change how spicy it is by either adding a bit of buffalo sauce or putting a little less in. All you have to do is adjust the ranch dressing by the same amount to keep the consistency of the dip.

Buffalo chicken dip can be served with any crackers, but I prefer Ritz crackers. They are just crunchy enough and have that buttery taste that makes them perfect.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 8 oz cream cheese, softened
  • 8 oz ranch dressing
  • 3 oz buffalo sauce
  • 8 oz Mexican blend cheese, shredded
  • Crackers

Preparation

Preheat oven to 375F. In a saucepan, over low heat, mix shredded chicken with cream cheese.

Add the dressing and hot sauce.

Once mixed, add shredded cheese.

Stir until completely mixed and spread the buffalo chicken dip in a 9×13 baking dish.

Bake for about 10 minutes, until the dip is bubbly and the cheese starts to brown. Serve warm with crackers.

Leftovers

Place leftover buffalo chicken dip in a container and refrigerate for up to 3-4 days. It can be eaten cold, or reheated in a saucepan until just warmed through.
