Use the slow cooker to make a yummy, warm nacho cheese dip. It’s perfect as an appetizer for a potluck or game day.
Cheese is one of my food weaknesses. I don’t even like keeping pre-shredded cheese in the refrigerator because I will go by and just grab a handful then wonder why we never have enough for recipes!
Many years ago, when we lived in Orlando, the office I worked for did a potluck lunch for our annual Christmas party. One of the doctors would always bring her warm cheese dip with tortilla chips and it was delicious.
The only thing I didn’t like, as a parent making this for my children, was the use of so much Velveeta cheese. I have been trying to use real food and simple ingredients instead of processed when we can, and that includes cheese. Although, I do like the way Velveeta cheese melts when making a nacho cheese recipe.
So I switched out the Velveeta for regular cheese. Well, most of it. Having just a small amount of Velveeta helped everything melt together in the crock pot.
Why Cubed Cheese?
Even though it takes a few extra minutes, having the cheese cubed makes it melt better. I’ve done this with a few cheese dip recipes now, and it makes a difference. When the cheese is smaller, and similar in size, it will melt at the same rate.

Nacho Cheese Dip Step by Step
Ingredients
- 1 lb ground beef
- 16 oz sharp cheddar cheese, cubed
- 8 oz pepper jack cheese, cubed
- 4 oz Velveeta cheese, cubed
- 24 oz picante sauce
- 4.5 oz green chiles
- 1 tsp minced onion
- 1 tsp minced garlic

Preparation
Brown the ground beef in a medium skillet until cooked through.

Meanwhile, add all other ingredients to the inner pot of a slow cooker.

Stir in the browned ground beef.

Cover and cook on high for about 3 hours, stirring every 30 minutes.

Reduce to low heat until ready to serve.

Leftovers
Storage: The best way to store leftover beefy nacho cheese dip is in an airtight container in the refrigerator for up to 3-4 days.
Reheating: I prefer to reheat the cheesy dip in a small saucepan over medium-low heat. Make sure to stir often, until just warmed through, about 5-7 minutes.
