BBQ Chicken Sandwiches Made in the Slow Cooker

Now that we live in Texas, barbecue is a must! Then again, I’ve been making this recipe for easy BBQ Chicken Sandwiches long before we moved. I make these sandwiches in the slow cooker, so it’s a super simple recipe that you can make any night of the week. It’s also a pretty cheap recipe with only a few ingredients.

One of the hard parts of moving is not being able to find foods that you once loved that are regional. We really miss shopping at Publix, which seems funny because I never knew I would miss a grocery store until we moved out of Publix territory. 

We also really miss Martin’s brand potato roll hamburger buns. None of the stores around us carry them, and the other store-brand potato rolls just aren’t the same. So if you can find those, they have the perfect texture and flavor to match this recipe. If you can’t, then any sweet roll will go best such as Hawaiian rolls.

Using the slow cooker for this delicious meal makes it easy work, and it is ready whenever you need it. We like meals like this for nights that we are all on the go, or sometimes when Justin has meetings and we need to eat at different times. 

Serving Suggestions

  • Add other seasonings such as chili powder, red pepper flakes, garlic powder, or onion powder
  • Slice a red onion to add to your delicious sandwiches
  • Serve with other BBQ sides such as potato salad, coleslaw, dill pickle slices, and fresh-cut watermelon
  • Make shredded BBQ chicken with dark meat by replacing the chicken breast with boneless skinless chicken thighs
  • Use your favorite BBQ sauce for this delicious recipe

BBQ Chicken Sandwiches Step by Step

Ingredients

  • 1 1/2 cups Sweet Baby Ray’s BBQ Sauce
  • 2 tbsp Worcestershire sauce
  • 3/4 cup zesty Italian dressing
  • 1/4 cup brown sugar
  • 2 chicken breasts (boneless, skinless)
  • 4 hamburger buns
  • 4 slices provolone cheese

Preparation

I like to get Sweet Baby Rays BBQ, but you can use any brand that you prefer. I buy the generic zesty Italian dressing and use part of it for this, then use the rest on salads throughout the week.

Add the BBQ sauce, Worcestershire sauce, zesty Italian dressing, and brown sugar to the slow cooker. Stir to form a sauce.

Place the boneless skinless chicken breasts in the slow cooker and cover with the sauce.

Cover and cook on high for four hours or low for seven hours. After the chicken cooks, remove it from the slow cooker and shred the meat. Hint: if you have a stand mixer, you can use the paddle attachment on stir to shred chicken. Just keep an eye on it because it will go from shredded to mush very quickly. Scoop about 1/2 cup of the sauce from the slow cooker and stir it into the shredded chicken.

Distribute the chicken onto the hamburger buns and top with a slice of cheese.

BBQ Chicken Sandwiches Leftovers

Storage: Place leftover barbecue chicken in an airtight container and refrigerate for up to 3-4 days. Make sure to pour some of the sauce over the chicken to keep it moist. 

Reheating: For the best results, reheat the chicken in a medium saucepan over medium heat until warmed through, about 5-10 minutes. If the chicken is dry, add some of your favorite barbecue sauce, a bit of chicken broth, or some of the leftover BBQ sauce if you saved some. 

Freezing: Let the chicken cool completely to room temperature. Move to a freezer bag or freezer container and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating on the stove top.

    This is such a quick and tasty option for dinner! I usually don’t buy sauces (by choice) I prefer making them myself, so it’d probably be a good option for when I have BBQ sauce leftovers!
